Will this work connected directly to an RCA cable and connected to a Quanser board for use with Matlab Simulink?

I'm not an expert but I know enough to say it depends on you definition of "work". If you require highly accurate measurement, then no. If you need "close enough", then yes. A T/C is a junction of dissimilar metals. At that junction a voltage (mV) is generated which relatively linear to temperature change, this makes it easy to convert to temp. So, each connection that is made in the sensing circuit of dissimilar metals creates a thermocouple (ie- RCA jack; Sn, Ni or Au plated brass to Chromel + & Alumel - of a K type thermocouple). The ambient temperature where these connection are made will effect the overall mV value generated in the circuit. -good luck
